I blame UCAP.
I'd hardly heard of podcasts before I stumbled across you guys with your very first episode. Now I have over 100 episodes from several different sources, all aviation related.
The best of course is UCAP. Then there's Airspeed with Stephen Force, excellent. Pilot Will and The Finer Points, Avweb, Aero-News Network and several others are also on my iPod.
Now I've got to tell you guys about a very entertaining entry I found while perusing thirtythousandfeet.com: "Betty in the Sky with a Suitcase". Man, what a hoot. This “flight attendant with a major airline” tells the funniest and some pretty fascinating stories. You got a' check her out: http://betty.libsyn.com/

Ah yes, all very good podcasts. The first one I discovered was the UND Aerocast, which is a video podcast. I read about it in a blurb in AOPA Flight Training magazine. Since then, I've started listening to all of the aforementioned podcasts, but let me toss a few more in the ring -

The Flying Pilot - Len hasn't posted a new episode in a while, but I think you can still get all of the old episodes.
The Pilotcast/CFICast/AMECast - yeah, they've kind of pod-faded, but their old episodes are still available and still entertaining. They released a couple of video podcasts recently, so hopefully they'll start putting some more hangar talk out there. Tony C. is a regular on the CFICast (as well as semi-regular on several of the other podcasts the original poster mentioned - why start your own podcast when you can just be a guest on everyone else's? :) )
The Student Pilot Flight Podlog - Pilot Will's original podcast, chronicalling his journey to becoming "Pilot Will". Of course, there are no new episodes from this, but these are great for people learning to fly.
Perspectives in Aviation Safety - an internet talk show turned podcast. Kathleen O'Brien is with the FAA Safety department at the Long Beach FSDO, and she does a weekly talk show on talk2k.com, which has been released as a podcast. She has several interesting guests and really talks a lot about the safety aspects of flying, from several different angles (or should I say perspectives?)
The Aviation Video Podcast from OnTheFlightLine.com - a video podcast put out by Jason Miller's group. There are only a couple of episodes so far, but they are very well done and very interesting... check the credits to see which familiar podcaster works behind the scenes on this show ;).
Learning to Fly Together - an airline pilot and CFI who is teaching his wife to fly. This is a combination flying and relationship podcast and to be honest, I lost interest in it and decided to unsubscribe, but it might be good for some other people out there!

There are a couple more that I also used to subscribe to that I can't remember the names of. They've pod-faded by now, but the old episodes should still be available. One in particular was by a guy who had a blog about his effort to learn to fly, then turned it into a podcast by recording readings of all of his blog entries.

Now, a few good non-aviation podcasts:

The News From Lake Wobegon - growing up as the son of a Lutheran minister, my family's always been a big fan of Garrison Keillor, who does a radio variety show on Saturday nights on NPR called "A Prairie Home Companion", and starred in a movie of the same name. This podcast is the signature monologue from that show and it always lights up my iTunes on the Monday afternoon after the Saturday show. He's a really funny guy.
The Vintage ToonCast - video podcast of classic cartoons - Looney Tunes, Popeye, Betty Boop, and more!
The Best of YouTube - no need to spend hours scouring YouTube to find the best and funniest videos, this video podcast sends you a different one each week!
Craft Beer Radio - Great podcast for a beer snob like myself :)

I'd love to hear about some other ones!

If you're on to craft beer, you'll have to check out a chain of bars called The Flying Saucer - over 80 beers on tap and over 130 more in bottles in each of their locations. They have the "UFO Club", where if you drink over 200 beers (over time, not in one night, they only let you count 3 per night) you'll get a plate with your name on it on the ceiling and a party with a $100 bar tab for you and your friends. I do have to brag a bit and say that I am the proud holder of a plate at the Houston Saucer.

In addition to drinking craft beer, I also dabble a little bit in making beer. I've made two batches so far - one was a Sweet Stout, which my friends tell me is one of the best stouts they've ever had.
